Yes, a grease trap must sit between the sink and the common drain because fats solidify in cold pipes. We choose the trap size based on sink count and instruct staff to empty it weekly.
We install a one-way flap valve in the main drain near the floor trap and ensure the vent pipe is open at roof level. Air entering from above balances the pressure and prevents odours from being drawn upward.
